Fruit preserve Mandarin

Ingredients

  • 1kg mandarins
  • 1 kg sugar
  • 1200mL water
  • 1 lemon

Execution

Put the whole mandarins, after washing them, in cold water and for two days change it regularly, about 2-3 times a day so that they become bitter. On the third day, open a hole through their base to their tip with a toothpick and boil them in clean water for ten minutes.
As soon as the first phase is completed, take the tangerines out of the pot and drain them. Place them in ice water. Pour water, sugar and lemon juice into a saucepan and boil for 5 minutes on high heat. Add the tangerines into the syrup and boil for another ten minutes. Take the pot off the heat and leave it for 12-16 hours so that the tangerines absorb the syrup. Remove the tangerines from the syrup. Boil the syrup again until it thickens, over low heat. When the syrup sets, add the tangerines and boil again for another five to ten minutes on a low heat.
We put the tangerines and the syrup while they are very hot, in a jar of our choice (not too small to fit the tangerines), put the lid on tightly and turn it upside down. Allow to cool, turn the jar to its normal position and store in the refrigerator.
Open it after two weeks and enjoy!
