Fruit preserve cherry

Ingredients

  • 1kg cherries
  • 2 L water
  • Lemon juice, from 3 lemons
  • 1kg sugar
  • 1 tsp vanilla extract
  • Strained yoghurt for serving

Execution

Put the cherries in a bowl, 2 liters of water, 2 lemons cut after we have squeezed their juice and leave them for 2 hours so that the cherries become crispy. After 2 hours, rinse them with plenty of water. Remove the pits and stem from the cherries and place the cherries in a saucepan. Add sugar and mix lightly with a wooden spoon. Leave it overnight in the fridge. The next day, add 100 g water to the cherries and sugar, put the pot on high heat and let the dessert boil without stirring.
As soon as it boils, skim the foam off the surface with a spoon. Lower the heat and simmer for 15 minutes. Let the dessert cool completely covered with a towel. The next day, boil the dessert again for 10-15 minutes. Towards the end of boiling, add the lemon juice, vanilla and mix. Remove from the fire. Allow to cool well and place in sterilized jars. Serve with yogurt.
