Apricot Chutney

Ingredients

  • ½ kg apricots
  • 1 dry white onion
  • 10g fresh ginger
  • 5 teaspoons olive oil
  • 60g white vinegar
  • 100g brown sugar
  • 60g apple juice
  • ¼ teaspoon salt
  • ½ teaspoon cinnamon

Execution

Remove the pits from the apricots and cut them into cubes, cut the onion into small pieces of half an inch, and grate the ginger into a dice. Heat the olive oil in a frying pan over medium heat, add the onion and ginger and cook until they are glistening. Add the vinegar, apricots, salt, sugar, cinnamon and juice and cook over low heat until the apricots are tender. Mash about ¼ of the mixture with a fork and put it in jars. Excellent accompaniment for meats, cheeses and cold cuts and for glazing meats that will be roasted in the oven.
